Description : 

The Canadian Atlantic lobster season runs from early May until the end of June. The rest of the year the lobster moults, that is, it sheds its shell so it can grow. In the first year of life, a lobster can moult up to 10 times. As it ages I will change once a year until it reaches maturity. It takes six to eight years for a lobster to reach a market weight of 500g. A small lobster is believed to be more tender, but that is not true. In addition, you will get a better yield with a larger lobster.

Lobster is rich in protein and is an excellent source of vitamin B5 and B12. It also contains omega 3 as well as essential minerals such as phosphorus, copper, zinc and selenium. It therefore has all the attributes for good bones, muscles, blood and thyroid health.

Cooking method for boiled lobsters

Choose a pot large enough to accommodate your lobsters, fill it with water, add sea salt (we don’t want our lobsters to be too salty but we don’t want them desalted either) and bring to a boil. Before placing your lobsters in the cauldron, make sure to remove the rubber bands on the claws otherwise your lobsters may have a little taste of rubber. The cooking time starts when the water begins to boil again. The cooking time of lobster does not only depend on its size but also on its sex. As the female contains eggs, an additional 2 minutes will be needed on the first 454 grams (1 pound) to ensure that the eggs are fully cooked. When properly cooked, the eggs will be red. If the eggs are still black they are undercooked. 

For a male, it takes 12 minutes on the first 454 grams (1 pound) and 14 minutes for the female. Then add 60 seconds for each additional 113g (¼ pound). If cooking males and females, simply dip the females in first and add the males 2 minutes later.
